Cooking time: 12 minutes
Serves: 4

1 brown onion, finely diced
4 cloves garlic, minced
1 tsp capers, finely chopped
1 Tbsp extra virgin olive oil
1 cup roasted red capsicum
2 cups tomato passata
2 tsp brown sugar
1 tsp red wine vinegar
sea salt flakes and freshly-milled black pepper
400g fettuccine
½ cup finely-grated Parmesan
10 balls bocconcini, halved
1 Tbsp pesto

1 Sauté the onion, garlic and capers in olive oil for 3 minutes until softened. Add the capsicum, passata, sugar and vinegar, then simmer for 5 minutes. Purée with a stick blender, then season with salt and pepper.
2 Cook the pasta in a large saucepan of rapidly-boiling salted water until al dente, then drain well and toss with the Parmesan. Spoon into bowls, top with the sauce, then arrange Bocconcini pieces on top. Pipe a drop of pesto onto each bocconcini ball to make eyes.
